GRAIN FRITTERS.


Grain fritters are made with rice, dals and deep fried in oil.  Though I do not prefer oily food, once in a while that too during heavy rain compulsorily make you to sit at home and watch through the window or balcony, nothing to do, munching something crispy and fried with a cup of coffee / tea is  really you look forward.

Hence thought of making this crispy grain fritters and enjoyed with the tea.

BADAM FRITTERS (ALMOND FRITTERS)

Badam it is said that if consumed daily, increase your memory power.  Whether it is increasing memory power or not, everyone like to eat badam as it is or soaked in water and eat it.

This dish is the invention of my daughter Aishwarya.  One day when I came from Office, she told me, amma, open your mouth, I have prepared something.  Do not scold me as I have fully utilised the badams which you had kept.

After eating the fritters, I just hugged her and said, it is really nice darling.  But I will  tell  you something beta,  while preparing anything in the gas, especially with oil, you must be very careful as she was small enough to handle the gas alone, she said do not worry mummy, I will take care.

Since it is very tasty, but very heavy and will not be able to consume more than two to three at a time, suggest you make it in small quantity for the first time.



Almonds are highly nutritious.  they are of two varities. one is sweet and other bitter.  sweet variety is edible  while the bitter variety is used to make almond oil.  They are high in protein fat, calories, vitamins and minerals.  it also provide good amounts of calcium, phosphorous, niacin, zinc, and magnesium,

Almond milk is an excellent alternate for cow's milk.  It is useful for those who have lactose intolerance.

Almonds are high in monounsturated fats, the same type of health promoting fats as are found in olive oil, which have been associated with reduced risk of heart disease.  It has medicinal value, regulates cholestrol/blood pressure and good for brain and heart.

MOONG SPROUT STIR FRY (DRY SUBZI)

Sprouts contains proteins, vitamins viz. A, B,C & K and easy to digest.  Once in a week, we must include this in our diet.  We can make sprouts salad, stir fry or make gravy based curry too to serve along with roti, phulka and Pav.

There are various health factors in the sprouts.  The sprouts can be just put in boiling water, kept for a second and remove it.  this can be had with dash of lime and sprinkled salt on top of it as a breakfast.

This is an easy to make dry subzi.  Can be eaten as a snack with  little lime juice  and chat masala in it or as a side dish for rice, chapati etc.

BREAD PAKODA

Bread pakodas are the favourite snack in our house.  Whenever  my children are bored of eating, they used to tell me to make something good. (kuch acha). that is their dialogue.  At this time, I must understand that they want something like onion bhajia, potato bhajia or pakoda.

Bread is always there at home hence I quickly make these pakodas.  A quick snack for your unexpected visitors along with a cup of coffee/tea provided you have the items in stock at home like bread, gram flour,red chilli powder etc. It can be made very easily.

This can be served at any point of time at my home.  You also enjoy the same.  let us look at the recipe now:

METHI THEPLA (FENUGREEK LEAVES THEPLA)



Methi thepla  is made with methi leaves, gram flour, wheat flour and the masalas added in it.  It  is anytime snack, for lunch, breakfast or while travelling, it is handy.  

Since the fenugreek has got medicinal values and good for health, I always make this thepla or subzi out of the leaves when it is in season.  When it is out of season also you can make it with kasoori methi.  But I prefer the fresh tender leaves.  




Fenugreek or methi leaves are very rich in vitamins and minerals and they get easily absorbed by the body. Some major ingredients include calcium, potassium, phosphorus, iron and dietary fiber in its naturally occurring form as in other vegetables. The availability of vitamin K is as good as spinach. The protein rich fenugreek leaves can be treated as a wonder herb.
