Vegetable pulao is a one pot meal you can relish with any kind of raita, papad and pickle. It is a delicious dish any time you can enjoy for lunch or dinner.
Sometimes when the children are fussy about eating vegetables, this is the easy method for you to include all the vegetables and make them eat. The main ingredients of the dish is the rice and vegetables.
Now let us look at the recipe now:
preparation time: 15 minutes, cooking time: 10 - 15 minutes Serves: 1
1/4 cup basmati rice, surti kolam or vada kolam
1/2 cup water
1/2 tsp red chilli powder )
1/4 tsp garam masala powder )these can be avoided for making white pulao
1/8th tsp turmeric powder )
1 small piece of tej patta
1 chakri phool
1 green cardamom
1 tsp oil
1 tsp ghee
1/2 tsp salt
3-4 french beans
1 small onion
1 small tomato (not to use for making white pulao)
fistful of green peas
3-4 pcs of cauliflower florets
OR 1/2 cup assorted above vegetables
2 tbsp coriander leaves for garnishing.
Wash and soak the rice in water for 30 minutes. after 30 minutes drain the rice and keep aside, keep the water.
Slice the onion or chop. cut the beans into 1/4 " pieces, carrots into cubes. Chop the tomatoes.
In a kadai, heat oil and ghee.
when it is hot enough add the tej patta, chakri phool, cloves, dalchini saute for 20-30 seconds.
Add the onion and saute till transparent.
Add the vegetables and saute for two minutes in medium flame.
(If you want to make white pulao, skip the following a & b ingredients.)
a) Add the tomatoes cook till mushy.
Add the drained rice and saute till glazed.
b) Add the chilli powder, garam masala and haldi powder, mix well.
Add the water measure it and ensure that it is half cup, salt and bring to boil.
reduce the flame and allow to cook for 8-10 minutes. In between do not open.
after 8 minutes, you will observe that the water is completely dried up.
Fluff it with fork,cover and keep for 10 minutes.Your vegetable pulao is ready to serve.
How to serve:
Serve hot with raita, papad and pickle.
Note: If you want to make white pulao, do not add haldi, tomato, red chilli powder and garam masala.
You can also cook them in pressure cooker for one whistle in high flame and second whistle in medium.
