KOTHMIR PARATHA, CORIANDER LEAVES PARATHA

Like any other parathas, coriander leaves paratha is also very tasty and healthy.  When the same is available in abundance, I always make use of the same for making parathas otherwise also I make it.  It is a simple preparation with the masalas you want to add to the wheat flour.

I never make the stuffed parathas as my children won't like it.   It is always mixed with the flour and the paratha is made at home.

Let us look at he recipe now:






Preparation time:  10 mts
Cooking time: 30 mts
Serves:  2-3


Ingredients:

1 cup
Tightly packed chopped coriander leaves
1 and1/2  cup
Wheat flour
1
Onion finely chopped
1/4tsp
Hing powder
¼ tsp
Ajwan
¼ tsp
Turmeric powder
1 tsp
Salt
1 tsp
Chilli powder
1 tsp
Coriander powder
½ tsp
Cumin powder
1 tbsp
Roasted white sesame seeds
1 tbsp
Ginger garlic green chilli paste
¼ tsp
Amchur powder
¼ tsp
Chaat masala
As required
Oil or ghee
Flour
For dusting.

Method:

Step 1

In a mixing bowl, put all the ingredients and mix well to get a crumbled form. Add water little by little to make the dough for the paratha.


Step 2

Divide the dough in equal parts.  Depending upon the size you make the balls, the parathas are more or less in numbers hence I have not given the numbers.

Step 3

Dust some flour and roll out the parathas.  


Heat the iron tava put the paratha in it, cook both the sides. apply ghee or oil as you wish and cook both the sides till you get brown spots.


Repeat for the remaining dough.

How to serve:

Serve hot with pickle, curd, sauce etc.
