DOSA STUFFED WITH KUTCHI DABELI MASALA

We all are familiar with Masala dosa, Mysore Masala dosa.  Here is dosa stuffed with kutchi dabeli masala.


You are fond of dabeli right. If left over masala is there, do not worry what to do.  You can fill it on top of the dosa and enjoy it. Believe me, it was awesome.



Dabeli is a street food which can be enjoyed at any time. The basic masala ingredient is potato.  The chutneys makes it more tastier.

Let us look at the recipe now:


Ingredients:



1 cup dosa batter

1 cup dabeli masala (clik on dabeli  for the recipe or see given below) 
lasoon chutney
sweet chutney
onion chopped, pomegranate, sev, chopped coriander leaves etc.
oil and butter  for making dosa


Method:



Step 1


Heat a tava, smear with oil.  Spread one laddleful of dosa batter.  Allow to cook the same.  Spread some butter, then spread  lasoon chutney. Spread the masala, put all other ingredients like onion, pomegranate seeds, coriander leaves,  sev etc. add some butter and cook till crispy.


serve hot.






How to make DABELI:





Dabeli or Kutchi dabeli or Double roti is a snack food of India.  Originated from the Kutch region of Gujarat, it is a spicy  street food and a snack item with a cup of hot  tea or coffee. It is  made with boiled potatoes mixed with the dabeli masala, garlic chutney, date tamarind chutney then put in the Pav or Bun garnished with nylon sev, onion, roasted masala peanuts.

In Maharashtra, the Vada Pav is famous, similarly, in Gujarat, this delicious dish is famous.  It is not only famous in Gujarat, but in other parts of India also.

If you have the chutney items and masala ready at home, it is an easy dish to make at home.

Dabeli






 Ingredients


How to make Masala


1 red chilli
1 tsp coriander seeds
½ “ stick cinnamon (dalchini)
2 cloves (lavang)
¼ tsp cumi seeds (jeera)
¼ tsp amchur powder.
1 tbsp dry coconut grated

Or you get ready made dabeli masala  which can also be used.


For The Filling

 1 cup boiled and mashed potatoes ( i used three medium size potatoes)
½ tsp cumin seeds
1 pinch of asfoetida
3 tsp dabeli masala (ready made one) or as per taste.
2 tbsp khajur imli ki chutney (date tamarind sweet chutney)
2 tbsp oil
Salt to taste

Normal Pav/Burger buns/Dabeli pav 
Butter for roasting the buns/pav
For serving:


½ cup roasted masala peanuts
½ cup chopped coriander (hara dhania)
½ cup nylon sev (very thin sev)
onion chopped,  Pomegranate seeds, garlic  chutney   and  date tamarind chutney as required.
Method


Making dabeli masala 
Roast all the ingredients in a pan for 1 to 2  minutes or till the aroma you get.   Cool down and grind to a fine powder in a blender.

Use the Ready made dabeli masala which you get in the market.



For the filling
Heat the oil in a pan.  Add the cumin seeds. Now  add the asafoetida, dabeli masala (as required)  potato, salt  and saute for few minutes.  Add  ½ cup of water and mix well.  Remove from the fire, add  2 tablespoons of khajur imli ki chutney and mix well.  Transfer it into a plate and allow to set. 

Put some chopped onion, pomegranate  seeds, grated coconut, fresh grapes, apple, bits of pineapple etc.  on top of it.  Since this is a very spicy item, the above fruits are added to get some sweetness and flavor.


 


To proceed further 
Slice the burger buns  or dabeli pav or the  normal pav into halves.  Put some garlic chutney, sweet chutney on both the sides of the pav.

Place a portion of the filling on the lower half of each bun. Then put chopped onion, peanuts, coriander, sev, pomegranate seeds. If you wish, can put some  fresh garlic chutney and khajur imli ki chutney again. 





Heat a pan, put some butter on it.  Cook the pav filled with masala on both the sides  soft or till crisp  according to your choice. Dip on the sev again,if you wish and serve hot.
