BABY BANANA PLANT STEM CURRY


I have got the habit of watching food and travel channels because we get to know various places and the food habits of that particular region / state/country.  Since we are connected with food through our blog, it is an interesting channel for us to pass our time.

As I was watching the Travel XP channel, I happened to see them cooking the  tender banana false stem.  Though I do not remember, the ingredients put in for cooking the same due to some work in between could not be noticed and missed the recipe.  However, I saw them cutting the baby plant for preparing the subzi.

Since then I was also thinking of making the subzi out of it.

Recently, we had Satyanarayan Pooja in our Society and the Baby plants are used for the Pooja.  I brought the baby plant and removed the outer false stem till such time I got the tender stem. video

I cooked the subji out of it and to my surprise, it was really really delicious.  Here I am sharing with you the recipe and giving below little brief about the benefit of the banana plant.

Let us look at the recipe now:





Ingredients:  

1/2 cup banana stem chopped (of the baby plant)
3/4 cup coconut milk
1/4 tsp white pepper powder (if not black pepper powder)
1 white onion finely chopped
1 red fresh chilli chopped
1" pc of ginger  (julienne)
3/4 tsp tandoori masala powder
1/4 tsp turmeric powder
salt
1/2 tsp sugar

Tempering:

2 tsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
few curry leaves

 Garnishing:

1 tsp chopped parsley

Step 1

Remove the outer layer of the false stem of the baby plant till you get the soft ones as shown in the picture.
chop them finely and put in water.



Step 2

In kadai, heat the oil.  Put the mustard seeds. when it splutters, add the cumin seeds. when it is sizzling, add the curry leaves.



add the fresh red chilli and hing powder





add the turmeric powder


 white onion and saute for few minutes.    






Step 3

Drain the chopped banana stem and add the same.




 Saute for few minutes.    Add the tandoori masala,white pepper powder, ginger julienne saute for few seconds 




and add the coconut milk.






 After adding the coconut milk, keep on stirring for sometime till the boil comes.  

  Add salt and let it cook in medium flame till the coconut milk is reduced to get a semi solid subzi. 


Your banana stem subzi is ready to serve.


How to serve:

serve hot with roti, phulka or rice.

A brief about the plant:

The Banana stem is really not a stem  but is the flower stalk of the plant.  The thick stalks grow up from the ground and form the backbone of the plant is the inner portion of the fibrous stalk.  The rough and hard outer layers are removed to reveal the stalk.  Banana stem has a crisp texture and a mild flavour, both somewhat sweet and tart with a slightly bitter after taste.  The same is available throughout the year.

All parts of the banana plant are edible.  The fruits are the most commonly eaten and the leaves are used for a variety of culinary applications.  It is a custom since olden days to have food in the banana leaf and the practice is still continued.  In olden days, the food used to be packed in the banana leaves for traveling purpose.

Banana stem is high in fiber which aids in the treatment of ulcer or an acidic stomach. The fruit and the stem is high in potassium and vitamin B6 which helps in production of hemoglobin and insulin.  It has got medicinal values.  A glass of juice in the empty stomach helps in removal of kidney stones as it is a diuretic.
