MANGO SEED SUBZI



Mango seed has got medicinal values.  The dried mango seed can be rubbed in the chandan paste making stone and can be consumed for stomach related issues.

In the olden days, my mother used to say Manga puliku mara puli means for making the mango subzi, we have to put the tamarind also.

I got to taste the subzi from my neighbor who is a Jain Marwadi.  She makes various items which are quite new to me and is a source for new recipes.   Though  I am aware that the mango seeds are edible and have got medicinal values, never ventured to try the same.  However, recently I came across one T V show in which the dried mango seeds are used for making pickle.

Hence I tried to sun dry some mango seeds and kept.  When the neighbor gave me the dish, I was so excited to taste it and liked.   Now I am making a subzi out of this and sharing with you.

Let us look at the recipe now:

Ingredients:

1 cup
Dried Mango seeds
1
Tomato chopped
1
Onion chopped
1
Onion sliced
1
Green chilli chopped
1 tsp
Red chilli powder
1 tsp
Dhania powder
½ tsp
Salt
2 tsp
Oil
1 tsp
Mustard seeds
1 tsp
Cumin seeds
Few
Curry leaves
¼ tsp
Turmeric powder
½ tsp
Pav Bhaji masala

Generous pinch of asafoetida
 


Garnishing:

2 tsp
Chopped coriander leaves
2 tsp
Grated coconut
1 tsp
Fried onion

Method:


1.       Pressure cook the mango seeds for 2 whistles in cooker, allow to cool.  wash the same two to three times to remove the bitterness of the seed.

 2.       Heat oil in kadai,  add mustard seeds, when it splutters, add the cumin seeds.  When it sizzles, add the chopped onion, green chilli, curry leaves and sauté till the onion is transparent.  Add the chopped tomatoes, sauté till mushy.

4.       Add the red chilli powder, dhania powder, turmeric powder,  pav bhaji masala mix well. 

5.       Add the cooked mango seeds, mix well, cover and cook for 5 minutes to get the masalas incorporated in the subzi.

6.       Garnish with the ingredients mentioned under garnishing.

How to serve:

Serve hot with roti, rice etc.

Note:  Without the onion, tomato the same is prepared and the photo is attached as the main picture.  can add bit of lime juice or amchur powder too.


How to get the seeds:

After cutting the mangoes, wash and sun dry them




break open the shell and remove the seeds as given below





remove the thin mebrane like skin off the seed andchop them finely, sun dry them.  While cooking add salt, turmeric powder and pressure cook. wash two to three times to get rid of the bitter taste of it. and then proceed to make the subzi/pickle.
