PHODNI CHA BHAATH


Phodni cha bhaath is made by Maharashtrians.  It is also called as Porichukotti sadam.  The only diference is that we do not add onion in it.  It is very easy to make and tasty too.  I love to have it with onion-raita.  You can also use left over rice for this.

Let us look at the recipe now:



Prepartion/cooking  time: 1 hr
serves: 2-3



Ingredients :

1 cup rice   (use any kind of rice basmati or normal rice)  I used surti kolam
1 Onion finely chopped
1 green chilli chopped (if u want bit spicy, can add one more)
3-4 curry leaves


Others:

1/2 tsp Red chilli powder 
1/2 tsp Turmeric powder
A pinch of asafoetida 
1 tsp Mustard seeds
2 tsp Oil
Salt to taste
Sugar a pinch (optional)
1/2 lime juice (optional)

Garnishing:

1 tbsp chopped coriander leaves

Method :


Cook the rice, ensure that the grains are separate.  In a kadai heat oil, add mustard seeds, let them crackle.  Add the asafoetida, chopped onion, green chilli,  curry leaves, saute till the onions are soft.  add the chilli powder, turmeric powder, mix well.  Now add the rice, salt and mix well.  spray little water with the sprayer, cover and cook for two minutes.  switch off gas and allow to remain in the heat for another three minutes.  If you like, add in the lemon juice, garnish with coriander leaves and serve hot with onion raita.

Tips:  You can also add boiled peanuts or fried peanuts,  or green peas.  This is my personal choice.
