MUTHIA ( A GUJARATI SNACK)

Here I come with another snack item called Muthia.  Muthia is a Gujarati snack item.  Fist in Gujarati is called "Muthi".  This item is made  or shaped in a cylindrical shape or rolls  by using our fist.  It is a spicy steamed dumpling later on cut into pieces and seasoned and garnished with coconut and  coriander leaves.  

I had a Gujarati neighbour and she used to make this very often.  Whenever she makes this, one plate is  there surely on my table.  However, this recipe I am sharing with you all is shared by Ms. Rinku Shinde, my another neighbour.  There was lot of left over rice with her and she made this by using that.








Let us look at the recipe now:

Ingredients:

4 cup cooked rice
1 cup jowar flour
1 cup besan
1 cup wheat flour
1 cup bajra flour
1 cup vegetables grated and chopped ( french beans, carrot, corn, dudhi, cabbage)
Chilli powder, dania powder, cumin powder, black pepper powder, asafoetida, salt - as required.
chopped coriander leaves
2 tsp oil

tempering:

2 tsp oil
2 tsp mustard seeds
2 tsp white sesame seeds
asafoetida

Garnishing:

chopped coriander leaves and grated fresh

coconut.
Method:

In a mixing bowl, mash the rice well.  add the flours, masalas, salt and knead the dough.  add two tsp oil and mix well.  Now take out some dough and make cylindrical shape.  complete the process with the remaining dough.  Apply oil in a sieve and place the muthias on it.  steam cook the same for 20-25 minutes. switch off gas, allow to cool. 



 when slightly warm, cut the same into small pieces.  In another kadai, heat oil.  ad the mustard seeds and sesame seeds, asafoetida.  when they splutter, add the muthias in it and saute the same till slightly brown for 3-4 minutes.  garnish with coriander leaves and fresh grated coconut.   serve hot with any chutney or as it is.

  1. A wonderful healthy substitute for multi-grain chapati, excellent because of steam coking and bit of oil seasoning makes it a completely balanced food. Above all ease of cooking add feather to the cap of this snacak-cum-breakfast. Thanks a lot for such delicious and healthy cookies.
