DATES, CARROT, WALNUT CAKE l Cakes/bakes

22nd November is a memorable day in our life. Yes, we were married on that day.  A lovely journey for the past 24 years together with lots of ups and downs, two bundles of joy, graduation of my son, daughter in 10th.  What a lovely life God has given to us.

On this special day, thought of making something different.  Bored of making payasam, sweets.  so far I have not entered in the world of baking, thought will make a move from today onwards.  Thus, the recipe was tried by me and the result was wonderful.

Dates, carrot, walnut cake is made with  main ingredient as maida, brown sugar  and egg, easy to make relished by one and all.  The nuts, carrots  and dates adds a lovely flavour to the cake.




Let us have a look at the recipe now:

Ingredients:

1 1/2 cup flour (maida)
1 cup veg oil ( i used olive oil)
1 cup brown sugar
3 eggs beaten (instead of egg you can use 3 tbsp flaxseed powder + 9 tbsp water)
1 tsp cinnamon powder
2 cups grated carrots
a pinch of salt
1 tsp baking powder
1/2 cup chopped walnuts
1/2 cup deseeded chopped dates.


Decoration:

Whip cream or vanilla  icing cream ready made pack available in the market ( i used this) or any of your choice.

Method:

1.  Pre heat the oven at 180 degree centigrade
2.  Grease a cake dish
3.  Sift the flour, cinnamon powder, baking powder, salt together and keep aside.
4.  Beat the egg, mix together the carrots, sugar, oil, nuts, dates in a large bowl
5.  Combine the flour mixture into the above mixture and mix thoroughly.
6.  Pour the batter into the greased cake dish and bake for 35-40 minutes at 180 degree in the pre heated oven.
7.  When it is cooked, remove it from the cake container and allow to cool.
7.  Decorate the same as you wish.  Apply a fair amount of cream on top of the cake, level it.
8.  I used the ready made packet of Vanilla icing cream and

I baked it for 40 minutes.
the real taste is on the second day.
to make the designs, my daughter filled the cream in a cone and made designs out of it.
if you are using whipping cream, whip the same and apply all over the cake, decorate with cherries


1 tbsp flaxseed + 3 tbsp water = 1 egg.
