RICE PUTTU (SWEET VERSION), VELLA PUTTU

Rice Puttu or Vella puttu is made with rice powder, jaggery, coconut etc.  It is a famous sweet dish made in every household of Tamilians during Navrathri festival specially on Tuesday or Friday.  People arrange the Kolu/dolls in nine steps decorated specially for this with Idol of Durga, Lakshmi  & Saraswati, Dasavataram, Chettiyar bommai, fruits, vegetables made out of mud/clay and painted.  It is a lovely scene you must see in one of the Tamilians house.   It is also made when a girl child attains puberty, there is a small function for which this sweet is made.  It is a tedious process but the final product is really tasty.

Let us see how to make this dish

Ingredients:

1/4 cup rice powder ( I used the Nirapara Puttu Powder)
1/4 cup jaggery
2 tbsp grated coconut or coconut bits
few pieces of cashewnuts
cardamom powder
1/4 tsp turmeric powder
a  generous pinch of salt
2 tbsp ghee

Method:

  1. Dry roast the rice powder till turns brown colour, keep aside
  2. Boil a cup of water, add the turmeric, salt and keep aside, allow to cool.
  3. when the turmeric water cools down, sprinkle little water in the roasted rice powder and mix well.
  4. The rice powder should be moisturised with water till such time you get a binding powder at the same time when you break it, should be in the powder form.
  5. should not add too much water, take care of this.
  6. Now place this powder in a muslin cloth and steam cook for 10 minutes.
  7. after 10 minutes, take out the same, transfer it in a plate and mash well to ensure that there are no lumps in it.
  8. Now in a kadai, add little water and melt the jaggery.
  9. Add the grated coconut and one tsp ghee.
  10. Boil the jaggery till you get 2-3 thread consistency.  To check the correct form - drop little syrup in water and form a ball, if immediately it forms a ball, the consistency is right.
  11. At this stage, remove from the gas and add the steamed rice powder in it and stir well till you get a powdered form of puttu.
  12. Your neivedyam is ready.
  13.  heat  the remaining ghee and fry the cashews and coconut bits and add to the prasadam. ( if you are adding grated coconut, you need not add the bits of coconut, but if you wish both way you can choose).

  1. I have never tasted the sweet puttu this way. I have only eaten white puttu with sugar. Will try this out.

When you add the puttu to jaggery syrup, will it not become lumpy?? Just a doubt.
