SANDESH MODAK

Ganesha Chaturthi is the Hindu festival celebrated on the birthday (rebirth) of Lord Ganesha, the son of Shiva and Parvati.
It is believed that Lord Ganesh bestows his presence on earth for all his devotees during this festival. It is the day Shiva declared his son Ganesha as superior to all the gods, barring Vishnu, Lakshmi, Shiva and Parvati. Ganesha is widely worshipped as the god of wisdom, prosperity and good fortune and traditionally invoked at the beginning of any new venture or at the start of travel.

Sandesh Modak







On this occasion, various cuisines are made for neivedyam viz. modaks, idli, vada, kheer, full thali etc.

One variety of modak is presented here for you made out of paneer or chena.  Chena is made out of curdling the milk.

Let us look at the recipe now:

Ingredients:

1 ltr milk (I used amul milk - less fat one)
8-10 tbsp powdered sugar (sugar add as per your requirement - less or more)
2-3 cardamom (powder it)
few strands of saffron soaked in warm milk
2 tbs vinegar or lime juice
3 tbsp chopped pistachios
(for making colourful modak, i used green and orange food colour)



How to make the Chena or Paneer

Boil the milk.  when it is boiling, add the vinegar or lime juice and stir. 
 it will start curdling. 
 when the whey and chena becomes separate, strain it in a muslin cloth kept on a strainer. 
 Immediately, run through cold water. 
 now bring the sides of the cloth together and tie it.  
squeeze out the extra water and hang it for removing the whey fully from it. 
 it will take about 2-3 hours. 

Making modaks

remove the chena from the cloth and knead it with your palm thoroughly for about 5 minutes. 
 Now add the powdered sugar and knead again.  (at this stage, you can put the same in the non stick pan and heat it for exactly 5 minutes not more than that.  put it on an even surface and knead again when it is warm.  ) now add the saffron milk around 2-3 tsp, cardamom powder, knead again. 
 take out portion of the same, fill it in the mould, press it,

for making one colour or two colours

Open the mould and take out the modak carefully. 
Plain white modak

 the modak mould is in two parts while filling the chena mix, you can keep few pista pieces in it.  repeat the process of making modaks from the remaining portion and your prasad is ready.

NOTE;  for making colourful modaks, you can divide the chena mix into three parts.  keep one part plain white, in other two parts add  food colour one orange and another green.  this way you can make tri colour modaks.  You need the modak mould in three parts as mentioned below.  Fill one with white, second  with orange and third one with green.
