DAHI VADA

Dahi vada is  a  popular dish enjoyed by every one whether it is North or South.    There is a slight variation in the North Indian and South Indian Dahi Vada.  The urid dal vadas are made and soaked it in curd after putting them in hot water, squeezed out the excess water.

In South, the Dahi or Curd is slightly sweetened  and spices are added  but in north it is flavoured with green chutney and sweet chutney and spices.

We love both the version as it is your choice how to make the variation and eat it.  

It is a dish  loved by each and every one specially in summer I used to enjoy this directly from the fridge with lots of coriander on top of it. If the sweet chutney and green chutney is ready in your fridge, then it is every easy to make it.







Preparation time: 20-25 minutes
Cooking time:  30-40 minutes
Serves: 5-6

Ingredients:

To make vada:

1 cup urid dal
2-3 green chillies
Salt
Oil for frying

To make dahi:

2-3 cups of dahi
Chilli powder
Dhania powder
Roasted cumin powder
Black salt
Salt
Sugar

Sweet chutney (Optional)
Green chutney (optional)
Chopped coriander leaves


Method:

  1.  Wash and soak the urid dal for 2 hours. 
  2. Remove the excess water and grind the same coarsely with green chilli.  Do not add too much water while grinding
  3. After grinding remove the same in a bowl and fluff it with your hand for 5 minutes.  The vada will be soft if the air is incorporated in it. Add salt and mix again.

  1. Keep one bowl of luke warm water.
  2. Make the vadas in batches.  At a time, you can put 4-5 vadas. fry them till golden brown.
     3.  Remove from oil and directly put them in the luke warm water. Repeat the process till the batter is over.
        4.  Keep them for half an hour and take out one by one, squeeze the water by pressing them in between your palms, keep aside.

      Preparation of Dahi;

        1.  Beat the dahi, add salt, sugar, black salt as per your taste, mix  well and keep aside.

        2.  Place 3-4  vadas in a bowl.   Pour dahi on top of the vadas till the vadas are covered.
        3.  I use little extra dahi as I love the taste of it.
        4.  Sprinkle red chilli powder, dhania powder, cumin powder, chaat masala  on top of it and garnish with chopped coriander leaves. 

        5.   Keep it in the fridge for chilling.   Repeat the same with remaining vadas.

        How to serve:

        Serve the dahi vada chilled. If you wish, can add sweet chutney and green chutney while serving.  


        Variation: We can make the same with  raw banana also.
