PANEER

Paneer is made out of milk.  It can be prepared at home very easily.  what you need is milk, vinegar or lime juice. Home made paneer is always good.  See the videos in YouTube:  Paneer 1,  Paneer 2   &  Paneer 3







Let us look at the method now:

1 ltr milk
1 tbsp vinegar or lime juice.

Method:

Boil the milk in a thick bottom vessel.  when the milk rises, add the vinegar and stir.  I prefer to add vinegar as,  if you add lime, there is a slight smell of lime in it which I do not like.  When you add the vinegar, it will start curdling.  You can see the paneer and whey separates.  Put a muslin cloth in sieve  and transfer the same into it. ( or directly pour it in sieve)  Immediately run through cold water.  now gather all sides of the cloth, squeeze out excess water.  Now tightly tie a knot and place it on a tray and keep some heavy weight on top of it.  you can keep the polpat ( the stone in which you make rotis).  leave it for an hour.  remove after one hour, you can see the paneer set, cut into cubes and use it.

alternatively, after removing from the sieve, put in a flat surface and knead the same well with your palm.  then transfer the same into a cloth and keep for setting.

  2. Raji. What milk to be used? I had used toned milk (Amul Taaza) many times. But it does'nt turn out to be successful one.
